Wholesome, Easy Recipes
by Christine "Lazy Cook" Caridi
Anyone can be a good cook if they start with the right ingredients. I often think of myself as a lazy cook and a fussy eater. To be perfectly blunt, I don't like to cook. I dislike chopping and I especially don't like to clean the mess that results from cooking - especially cooking from scratch. Growing up, my mom cooked using mostly all fresh ingredients. I was spoiled. As a result, I've worked hard to find the easiest way to perepare high quality, good tasting, healthy food made from scratch.
So, in the coming days, I will be posting some of my favorite dishes! You will notice that these are all made with ingredients from Food Thing Network. Also, being the lazy cook that I am, if there is an easy and fast way to cook it, and it tastes great, then that is what makes the cut. Nothing complicated. Nothing a lazy cook like me couldn't handle! Eventually, we will have a comment section and rating section. (My son promises me he is going to build me a website that can do that!)

Super Fast Salsa!

Ingredients
Ripe Tomatoes (2 or 3 cut in quarters) Onion (quarter or less of medium size onion, cut in chunks) 1/2 Bell Pepper (red, yellow or orange, cut in chunks) Handful of fresh Basil leaves (5 or 6 large ones)
**NOTE: I usually make two batches, one with the above ingredients and one about half of a jalapeno pepper for those who like it spicy!
Put the ingredients in a chopper/blender and pulverize it. Pour it in a dish and serve!! It will taste amazing!!
